Salmon is one of the healthiest foods you can eat and it's delicious as well. It contains very high quality protein and the healthiest fat a human being can eat - omega 3. In fact, modern humans, especially those in industrialized nations like the United States and Europe, don't get enough omega-3 in their diet. Eating Salmon once or twice a week can go a long way to making up for this deficiency.
Most people bake or grill salmon. However, this process does denature some of the healthy omega-3 so it is no longer beneficial to the human body. The method of cooking salmon that is the healthiest and will not denature the omega-3 is poaching.
Poaching is quite simple. All you need to do is lay your salmon fillet into a skillet and cover it will water and then cook it very slowly until the water evaporates. You can also add lemon, herbs, and spices during this process for a more intense flavor. Occasionally, I will also poach salmon in coconut milk and use the juice like a sauce to pour over the fish and also a bed of quinoa or rise. It is delicious this way too!
The slower you cook the salmon, the more omega-3 you will retain. It also keeps the fish from drying out and it turns out flaky and moist. Taste wise, this is my preferred way of eating salmon now but I wouldn't have thought so before I tried it the first time.
