Maine and Rock Broiled Lobster Tails

DeliciousDeliciousEver wonder how to make your lobster taste just as good as Red Lobster makes theirs? First, Red Lobster uses two types of lobster – Maine Lobster and rock lobster (rock lobster also known as spiny lobsters are found in warmer waters and they have no claws, just a tail).


What you will need:


2 – 6oz Maine lobster or rock lobster tails


6 TBS Melted butter


¼ tsp salt


¼ tsp paprika


Dash of ground Black pepper


Dash of Cayenne pepper


Dash of Allspice


1-2 Whole lemons to cut into lemon wedges


*If your lobster tails are frozen, take them out a few hours early to thaw.


Pre-heat your oven to 425° F degrees.   


If you have Maine lobster, slice them down the top of the shell to the tail.  Crack the ribs in the center along the bottom of the tail so that you can hinge the shell open from the top.  Use a spoon to pull the meat away from the inside of the shell so that it is easy to eat when cooked, but leave the meat inside the shell.  Slice down the middle of the meat so you can spread open the colored part (this may have already happened when you cut the top of the shell open).


If you have rock lobster, use your kitchen scissors to cut down from the top of the shell to the tail.  Crack the ribs of the shell underneath so that you can spread the shell open on top and pull the meat out down to the tail. Use a spoon to pull the meat away from the inside of the shell so that it comes away free, but leave the end of the meat attached to the shell when you pull it out, and close the shell underneath it.  You should be able to rest the meat back down on top of the shell.  Cut about ¼ inch deep down the center of the meat so that you can pull the colored part of the meat over, exposing the white center (this may have already happened when you cut the shell open).


Brush the lobster meat with melted butter.  Combine the salt, paprika, black pepper, cayenne pepper, and allspice in a small bowl, and then sprinkle a dash of this spice combination onto each lobster tail.  Bake in the oven on a broiling pan for 15 minutes.  Turn your oven on broil and broil for an additional 6 to 8 minutes or until the meat or shell begins to turn a light brown on top, make sure to watch closely.  Be very careful as to not burn the lobster meat.  Remove from the broiler and serve with melted butter and lemon wedges, enjoy!
